Whats in season now?
Take advantage of the variety of chillis available (our favourites are capsicum and banana chillis). Fruits to buy are royal gala and golden delicious apples, apricots, rockmelon and grapes. Figs also come into season in February and make a wonderful carpaccio for dessert. See our recipe below.
Carpaccio of figs, muscatel reduction, candied walnuts and vanilla gelato
5 large purple figs
1 kg castor sugar
500 gr fresh walnuts
4 kg muscatel grapes
500 gr of vanilla ice cream
Bash out 5 figs between glad wrap and set aside.
Clean grapes, add to pot with castor sugar and cook until you have a thick jam consistency, then set aside to cool.
Chop the fresh walnuts into small pieces and add toa pan with 100 gr of castor sugar. Slowly cook over low heat until walnuts have been covered with sugar.
Arrange figs on plates and spoon over muscatel jam, sprinkle with walnuts and a scoop of ice cream eat immediately.
